My EASY Fresh Tomato Sauce Tossed with Rigatoni (A Family Fav)

Here's a dish that I made often this past summer (but still good year round). You'll need:

5-8 plump grapewine tomatoes, chopped up
(preferably from farmer's market or your own home grown tomatoes).


1 onion peeled, halved, and thinly sliced, which is then sauteed in a bit of EVOO.
Don't be afraid to let the onion brown a little. It'll give the sauce a more rustic flavour.
Add chopped tomatoes, basil, and season with salt and pepper.


Simmer till the sauce has reduced.


It might not seem enough to cover pasta for a serving 4, but looks can be deceiving.
The flavour of this sauce is beautiful, intense and robust. A little goes a long way!


Toss with pasta.
I always use rigatoni or penne, but this sauce will taste great with any short pasta.


Stir in some Italian grated cheese.
Here I used Grana Padano.


And presto!
You have a glorious Italian dish in less than 40 minutes, including prep.
The trick is to know when to boil a pot of water for pasta.
Check the cooking time on the package and plan ahead.
Another tip ... adding salt to the water will also help speed up the boiling process.

Well, who says there is no time to make something fresh on a week night?

Could I make the sauce in a crock pot? Then, I could put it on before I go to work and make the pasta, when I come home.

@Sweet and Savory:
I never thought of making it in the crock pot, but I think it's a great idea! The way I would make it is by adding more tomatoes (maybe doubling the recipe), along with some water (about half way), and cooking it on low for 6-8 hours. The addition of water will help prevent it from burning. Don't forget to add the seasonings also at the beginning. You can either saute the onions before adding them to the crockpot, or just for the ease of it, throw everything into the crock pot and press start. A quick sauce will taste different from one that is cooked all day, but still delicious nonetheless. :-)
